BEEF FILLET
Also known as: Undercut or Tenderloin
Fillet is a highly tender and very lean cut of beef from the loin of the animal, often considered the most expensive cut due to its desirable texture. It has a mild flavor and is well-suited for quick cooking methods like pan-searing for steaks or roasting as a whole piece.
While incredibly tender, it contains less fat and therefore less intense flavor compared to other cuts, with its main appeal being its melt-in-your-mouth tenderness.
The larger pieces are used for dishes such as Beef Wellington.

SPECIAL ROAST BEEF

Beef cuts used for roast are Batak, Silverside, Silver Roll, and Gola.
Batak
Also known as: Rump Steak
Batak is a large lean cut of beef usually weighing above 2 kg and makes an excellent roasting piece. It is taken from the hind quarter of the animal, between the rump and leg.
The topside muscle, being both lean and tender, makes an excellent roasting joint.

Silverside
Also known as: Topside
Silverside is a lean and versatile roasting joint derived from the hindquarters. Best suited for slow cooking, it thrives with low-temperature roasting or pot roast methods to become tender.
Silverside often has a layer of fat tied around it to help baste and keep it moist. Regular basting is recommended during cooking.

Silver Roll
Also known as: Bottom Round / Eye Round / Outside Round
Silver Roll is a lean and economical cut from the hind leg of the animal. It is best cooked using low and slow methods such as braising, roasting, or slow cooking.
Slicing thinly against the grain is crucial for the best texture.

Special Soft Beef
Beef cuts often used for soft cooking are Uppercut, Bendi, Front Leg, etc.

Beef Uppercut
Also known as: Strip Loin or Loin
This is where you’ll find some of the most premium cuts of beef. The loin is located directly behind the ribs and is not a heavily used muscle, making it very tender.
Sirloin is typically best for grilling, frying, stir-fries, and barbecuing.
Gola
Also known as: Thick Flank / Top Rump / Fleshy End
Gola is a lean, boneless cut from the rear of the animal. It can be sold whole for roasting or sliced into smaller pieces for braising and stir-frying.
As a lean cut, it benefits from quick, hot cooking methods like pan-frying and grilling.
